Yumm!  The perfect cheese can be found in Sherburne, NY at either the Big
H or Double H market -- I can't recall the name exactly.  Whenever we
drive up home to visit family, we always make it a point to stop there to
load up on this cheese.  You don't so much bite into it as become bitten
by it.

I've never had this with mustard and honey; I shall give that a try!
